Butternut Dill Squash
- 1 butternut squash
- olive oil
- salt and pepper
- shallots, minced
- garlic, minced
- dill, fresh
- Cut squash in half, remove seeds, and score flesh.
- Place generous amount of olive oil, salt, and pepper on squash.
- Cook at 400 for 45 minutes. Top with minced shallots, minced garlic, and fresh dill.
- Cook an additional 45 minutes.
