Healthy Ham Fried Cauli-Rice

This is quickly becoming one of our go to recipes when needing something quick. This Healthy Ham Fried Cauli-Rice is a super easy recipe to make and very family friendly.

We remember our kids coming home from school with their friends the first time we made it. We didn’t tell them there was cauliflower in place of the normal white rice we typically used. Half way through the meal we told them. They all started to look closely at the riced cauliflower and still couldn’t believe it. It was great seeing their reactions and still gobbling it down.

We love all the fresh ingredients used to make this Healthy Ham Fried Cauli-Rice. Most of the ingredients we just have on hand so we can create it anytime we want. You too can buy all these ingredients and keep them in your freezer for a last minute meal idea!

You can now purchase riced cauliflower from Costco, Trader Joes, Sprouts and so many places. If you’re having a hard time finding it in the fresh produce section, try the frozen, it works just as well!

One ingredient you might not be familiar with is coconut animos. Coconut aminos is made from organic coconut tree sap and has 65% less sodium than regular soy sauce. It’s soy free, GMO free, and gluten free. Coconut Aminos is one of those health changes we’re so glad we made.

You can find coconut aminos at most grocery stores, it’s amazing how people are demanding clean products and regular stores are starting to stock these types of items.

Healthy Ham Fried Cauli-Rice

Ingredients

  • 1 tablespoon olive oil
  • 1 carrot diced
  • 3 green onions diced
  • ½ cup ham diced
  • 1 tablespoon garlic minced
  • 1 tablespoon ginger minced
  • 20 oz. riced cauliflower defrosted or 2 1/2 cups fresh riced cauliflower
  • 2 tablespoons coconut aminos
  • 1 teaspoon salt
  • ½ cup peas
  • 1 egg

Instructions

  1. Heat oil up over medium high heat in pan.
  2. Add carrots, green onions, ham, garlic and ginger to pan.
  3. Saute for 5 minutes.
  4. Add riced cauliflower, coconut aminos, and salt to the pan and saute for an additional 5 minutes or until the cauliflower becomes tender. This may take longer than 5 minutes when using fresh cauliflower. (If using frozen riced cauliflower, simply defrost and place in the middle of a clean linen cloth. Squeeze out all liquid from the cauliflower.)
  5. Add peas.
  6. Now push all the ingredients to one side of the pan and scramble one egg on the other half of the pan.
  7. Once egg is scrambled, mix all the ingredients and serve.
