Natural Yeast Spelt Bread

Ingredients

  • 1 ⁄2 cup natural yeast start
  • 2 1 ⁄2 cups warm water
  • 1 tablespoon salt
  • 1 tablespoon honey
  • 1 tablespoon coconut oil
  • 6-7 cups spelt flour

Instructions

Directions:

  1. 1. Mix natural yeast, water, salt, honey, coconut oil and 6 cups flour in your bread mixer. Mix for a couple minutes until the dough is well incorporated, it may look slightly wet, this is ok it will absorb flour as it rests.
  2. 2. Allow dough to rest for 20 minutes in your mixer with the lid on.
  3. 3. Mix for 10 minutes on low speed. At this point you may add up to one cup of additional flour, you only want to add enough flour that the dough starts to leave the sides of the bowl while mixing. Less is always better than too much flour.
  4. 4. Transfer the dough to a greased bowl and cover with plastic wrap.
  5. 5. Allow dough to rise for 6 hours on your countertop.
  6. 6. Remove the dough from bowl and knead by hand for a few minutes.
  7. 7. Divide dough into two equal parts, form loaves and place it in two greased bread pans.
  8. 8. Let dough rise again for anywhere from 3-5 hours. You want the dough to rise above the bread pan rim.
  9. 9. Preheat oven to 350 degrees.
  10. 10. Bake at 350 degrees for 35 minutes or until center of bread reaches 180 degrees.
  11. 11. Remove from pans, allow bread to cool and store in your fridge.
