Zucchini Fritters

Zucchini Fritters came about when every neighbor around us started sharing their zucchini with us. What does one do with all that zucchini? One can only roast it and make so much zucchini bread!

We created these Zucchini Fritters with just simple ingredients we had on hand. Really that is where most great recipes come from. We have a theory that you don’t need a lot of fancy ingredients to make an incredible dish. This is no exception and it has such great flavors.

The key to making a great Zucchini Fritter is to make sure you get as much of the moisture out of the zucchini before assembling the ingredients together. This will guarantee a crispy fritter that won’t turn out soggy.

Following these simple instructions to make crispy Zucchini Fritters:

  1. Place zucchini in a colander.
  2. Set the zucchini in a colandar in the sink and toss with 1/2 tsp salt.
  3. Let stand 10 minutes.
  4. Then wring excess water out of zucchini with paper towels or a clean kitchen towel.

 

Next just start assembling your ingredients.

Almond flour

One whisked egg

Chopped chives

Mix well and form into patties

 

Flatten zucchini mixture and fry both sides till a golden color, approximately 5 minutes per side. Then place cooked zucchini fritters on paper towel to absorb any excess oil.

Ingredients

  • 2 medium zucchinis grated or zoodled
  • 1 teaspoon salt divided, 1/2 tsp. to release moisture and 1/2 tsp. to add to mixture
  • 1/4 cup almond flour
  • 1 egg beaten
  • 3 tablespoons chives finely chopped
  • salt & pepper
  • avocado oil to coat pan

Instructions

  1. Place zucchini in a colander (we used our Panderno noodle maker to make the zucchini noodles).
  2. Set the zucchini in a colandar in the sink and toss with 1/2 tsp salt.
  3. Let stand 10 minutes.
  4. Then wring excess water out of zucchini with paper towels or clean kitchen towel.
  5. Place all ingredients into large mixing bowl and gently mix it all together.
  6. Coat bottom of skillet with oil of choice (we used avocado oil) and bring the temperature to medium high.
  7. Drop 1/4 cup of mixture into your skillet, be delicate it will be a little fragile until cooked.
  8. Flatten zucchini mixture and fry both sides till a golden color, approximately 5 minutes per side.
  9. Place cooked zucchini fritters on paper towel to absorb any excess oil.
  10. Salt & pepper fritters.
  11. Serve with Dump Ranch dressing (found in Dressings and Sauces).
