Butternut Dill Squash

Butternut Dill Squash


  • 1 butternut squash
  • olive oil
  • salt and pepper
  • shallots minced
  • garlic minced
  • dill fresh


  1. Cut squash in half, remove seeds, and score flesh.
  2. Place generous amount of olive oil, salt, and pepper on squash.
  3. Cook at 400 for 45 minutes. Top with minced shallots, minced garlic, and fresh dill.
  4. Cook an additional 45 minutes.
