Chicken Salad Apple Sliders

Who doesn’t love a good chicken salad? It’s one of our favorites and we had such a great time putting these Chicken Salad Apple Sliders together. It’s such a great way to ditch the bread and replace it with an apple. The flavor combination is amazing together! SERIOUSLY!!!

We began making these Chicken Salad Apple Sliders by using our Whole Mayo recipe as the base. You can click on this link to find our Whole Mayo Recipe. This Whole Mayo is by far our favorite recipe for mayonnaise. We have tried about every paleo and clean mayo recipe out there and finally decided to take the parts we loved and combine them to come up with our own recipe. You should of seen how many batches we threw away until we got it right. We think it’s the best one around and so easy to make.

 

If you’re looking for the ease of buying pre made mayo, we recommend Primal Kitchen Mayo. It’s such a clean version of mayonnaise and it’s the only one we use, if not making our homemade Whole Mayo Recipe.

The first time we made this chicken salad recipe our mom decided to join us cooking. We combined all the ingredients and tasted it. It was missing something but we couldn’t figure it out. Then our mom said she always uses a pinch of ginger in her chicken salad recipe. THAT WAS IT!! The addition of ginger makes for a winning flavor. Good ole’ mom to the rescue!

 

 

Chicken Salad Apple Sliders

Ingredients

  • 1 cup chicken chopped
  • 4-5 tablespoons Whole Mayo recipe found on under Dressing & Sauces
  • 1 stalk of celery diced (including leaves)
  • 1/4 granny smith apple diced
  • 1 scallion diced
  • red grapes halved & quartered
  • dash of ginger to taste
  • salt & pepper to taste

Instructions

  1. Combine the above ingredients in a bowl.
  2. Place chicken salad over sliced apples with the core removed.

Our Mom was the one who taught us to add a pinch of ginger to chicken salad recipes, it's totally the winning ingredient that makes this dish amazing!
