Dairy Free Queso


  • 1 ½ cups raw cashews
  • cup roasted red peppers
  • 2 tablespoons lemon juice
  • ¾ cup water
  • 1 ½ teaspoons salt
  • ¼ cup nutritional yeast
  • ½ teaspoon chili powder
  • ½ teaspoon garlic powder
  • pinch of turmeric
  • 1 cup canned diced tomatoes, don't drain
  • 8 oz. green chilies, diced


  1. Place all the ingredients, minus the tomatoes and green chilies into a high-powered blender. Blend until smooth.
  2. Transfer to a sauce pan, add tomatoes and green chillies. Heat sauce up on medium low on your stove top until warm. If you feel the sauce is too thick, just add a little water.
  3. Place the Dairy Free Queso in a warming dish of your choice.

  4. Garnish with chopped scallions, tomatoes and red pepper flakes.

  5. Serve with baked corn chips or veggies.

Recipe Notes

How to make homemade baked corn chips:

Buy regular or sprouted tortillas from the refrigerated section of your local health food store. Cut the tortillas into triangular pieces and place them on a baking sheet. Spray with olive oil and sprinkle with course salt. Then simply place the prepared tortillas under the broiler for a few minutes until they are slightly crisp.
