Potato Salad

  • 3 extra large white potatoes cubed
  • ½ cup whole mayo found under dressings
  • 1 teaspoon yellow mustard
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 2 teaspoons salt
  • 3 scallions
  • 5 hard boiled eggs chopped


  1. Mix mayo, mustard, garlic powder, onion powder, salt and scallions.
  2. Add mixture to potatoes and hard boiled eggs, mix until all ingredients are incorporated well.
  3. Refrigerate at least 6 hours before serving to enhance flavors.
