Roasted Fingerling Potatoes with Dill Dip

Ingredients

  • 1 pound fingerling potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

Instructions

  1. 1. Preheat oven to 400.
  2. 2. Leave skins on and cut potatoes lengthwise.
  3. 3. Toss with oil, salt and pepper.
  4. 4. Place them on the a rimmed baking sheet.
  5. 5. Cook times will vary. We cook them until fork tender about 40 minutes.
  6. 6. Serve with Dill Dip.

Dill Dip Ingredients (combine):

  1. 1/2 cup whole mayo (recipe found under Dressings & Sauces)
  2. 2 tablespoons fresh dill, minced
  3. Juice of one lemon
  4. 1/2 teaspoon garlic powder
  5. s & p to taste
