Brush serving dish with olive oil, then line the bottom with prosciutto or breakfast meat of choice.

Whisk eggs, coconut milk, fresh basil, scallions, salt and pepper.

Pour into prepared dish.

Place tomato slices on top.

Then sprinkle with nutritional yeast on top of the eggs and tomatoes.

Bake at 350 degrees for 30 minutes or till knife comes clean from the center.
