Cilantro Lime Vinaigrette


  • 1/2 cup rice vinegar
  • 1/4 cup light olive oil
  • 4 cloves garlic
  • 3 limes squeezed
  • 1 tablespoon date sugar or 2 dates
  • 1/2 teaspoon Kosher salt
  • 1/2 bunch of cilantro


  1. Mix all the ingredients (minus the cilantro) in a blender until dates and garlic are are no longer visible.
  2. Pulse in cilantro, don't over mix. You want only a fine chop.
  3. Store in refrigerator up to 1 week.
