Cilantro Lime Vinaigrette
- 1/2 cup rice vinegar
- 1/4 cup light olive oil
- 4 cloves garlic
- 3 limes squeezed
- 1 tablespoon date sugar or 2 dates
- 1/2 teaspoon Kosher salt
- 1/2 bunch of cilantro
Mix all the ingredients (minus the cilantro) in a blender until dates and garlic are are no longer visible.
Pulse in cilantro, don't over mix. You want only a fine chop.
Store in refrigerator up to 1 week.
