Ginger Mango Salad & Shrimp


  • 2 tablespoons olive oil
  • 1 tablespoon ginger minced
  • 1/3 cup scallions sliced
  • 1 mango diced
  • 1 tablespoon coconut aminos
  • 1 tablespoon cilantro chopped
  • 1 lb. raw shrimp


  1. Heat olive oil in skillet.
  2. Add ginger; cook 2 to 3 minutes until the oil is infused with ginger.
  3. Combine the infused olive oil with scallions, coconut aminos, cilantro and mango. Place into a bowl, set aside.
  4. Soak wooden skewers in water or use metal skewers.
  5. Add shrimp to skewers.
  6. Brush shrimp with olive oil and grill both sides approximately 5 minutes or until opaque.
  7. Plate mango salad on plate, then place grilled shrimp on top of mango salad.
