Warm Mustard Vinaigrette

Ingredients

  • 1/2 cup olive oil
  • 1/4 cup red wine vinegar
  • 2 tablespoons dijon mustard
  • 4 dates
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper

Instructions

  1. Mix above ingredients in a blender, then toss with roasted vegetables while still warm.
  2. Serve immediately.

Recipe Notes

This is a great way to add a new flavor to roasted veggies. You can roast ANY vegetable of your choice. We roasted red potatoes and sliced brussel sprouts then topped with them with Mustard Vinaigrette.
