Balsamic Fig Dressing

  • ½ cup + 3 tablespoons balsamic vinegar
  • ¼ cup figs diced
  • ¼ cup dates diced
  • 1 tablespoon shallots minced
  • ¾ cup extra light olive oil


  1. Bring 3 tablespoons balsamic vinegar, figs, dates, and shallots to a boil. Remove from heat, cover and let stand 15 minutes.
  2. Allow mixture to cool.
  3. Blend the cooled mixture, ½ cup balsamic vinegar, and extra light olive oil until well incorporated.
  4. Serve over lettuce wedge or toss with your favorite salad ingredients.
