Balsamic Fig Dressing
- ½ cup + 3 tablespoons balsamic vinegar
- ¼ cup figs diced
- ¼ cup dates diced
- 1 tablespoon shallots minced
- ¾ cup extra light olive oil
Bring 3 tablespoons balsamic vinegar, figs, dates, and shallots to a boil. Remove from heat, cover and let stand 15 minutes.
Allow mixture to cool.
Blend the cooled mixture, ½ cup balsamic vinegar, and extra light olive oil until well incorporated.
Serve over lettuce wedge or toss with your favorite salad ingredients.
