Mini Meatballs

When you think of comfort food, don’t meatballs always come to mind? Mostly because they’re a quick and easy meal to prepare. With just a few ingredients you’ll have dinner on the table in no time at all. Our family enjoys eating these Mini Meatballs all by themselves or we like putting them over spaghetti squash with a little marinara, so yummy!!

It’s so easy that we usually prepare a double batch and store them in the fridge for reheating throughout the week, our kids really like anything that can be quickly warmed up. This is also a great option for anyone who needs to take prepared meals to work. Just add some vegetables on the side and you have a great filling meal.

These Mini Meatballs works best when made from a combination of ground beef and the leanness of ground turkey, by combining the two meats you get just enough fat to make them perfectly moist. We find the combination perfect!

One of the tricks we like to use is getting out our cookie scoop for uniform balls. We like this medium sized professional cookie scoop you can find on Amazon. When your Mini Meatballs are all the same size it ensures uniform cooking, which takes the guess work out of checking each ball. Once your meatballs reach an internal temperature of 160 degrees, you’ll know they’re done!

Another trick to making a successful meatball is to place the prepared Mini Meatballs on a oven safe cooling rack. This allow the meatball drippings to not collect around the ball, it makes for a prettier meatball too.

Mini Meatballs

Ingredients

  • 1 pound turkey ground
  • 1 pound beef ground
  • 2 eggs beaten
  • 1/3 cup almond meal
  • 1 tablespoon garlic minced
  • 1 teaspoon onion powder
  • 1 tablespoon fresh rosemary minced
  • 3 green onions include green ends, sliced
  • 2 teaspoons salt
  • 1/2 teaspoon black pepper

Instructions

  1. 1. Preheat oven to 350.
  2. 2. Combine all the ingredients, roll into 1” balls or use a medium cookie scoop.
  3. 3. Place on a cooling rack on top of a baking sheet, bake for 30 minutes. Until internal temperature reaches 160 °F.
  4. 4. Eat plain, on top of spaghetti squash with marinara or top with our Sweet and Savory BBQ Sauce.
