Roasted Lemon Chicken
- ½ cup almond flour
- 1 teaspoon paprika
- 1 teaspoon salt
- 1 teaspoon pepper
- ¾ cup organic chicken stock
- 2 lemons juiced and zested
- 10 chicken thighs
Mix almond flour, paprika, salt, and pepper.
Dredge chicken thighs in mixture.
Cook skin side down over medium-high heat with avocado oil in a cast iron pan until browned.
Turn over chicken thighs. Add chicken stock, lemon juice, and the lemon zest of both lemons.
Bake at 375 degrees for 35 minutes.
We like to squeeze the cooked lemons over the top again to add even more lemon flavor to the chicken.
