Roasted Lemon Chicken
- ½ cup almond flour
- 1 teaspoon paprika
- 1 teaspoon salt
- 1 teaspoon pepper
- ¾ cup organic chicken stock
- 2 lemons, juiced and zested
- 10 chicken thighs
- Mix almond flour, paprika, salt, and pepper.
- Dredge chicken thighs in mixture.
- Cook skin side down over medium-high heat with avocado oil in a cast iron pan until browned.
- Turn over chicken thighs. Add chicken stock, lemon juice, and the lemon zest of both lemons.
- Bake at 375 degrees for 35 minutes.
- We like to squeeze the cooked lemons over the top again to add even more lemon flavor to the chicken.
