Pear Salad with Warm Vinaigrette
- pears sliced
- grilled chicken cubed
- bacon chopped
- sliced almonds toasted
To toast sliced almonds:
Place raw sliced almonds in a dry skillet, cook over med-high heat stirring constantly until the almonds reach a golden brown.
- 3 tablespoons bacon grease
- 1/4 cup balsamic vinegar
- 3 tablespoons light olive oil
- 1 date
- Combine above ingredients in the blender while the bacon grease is still warm.
- Toss over salad and serve immediately.
